i decided that one of my goals for november should be to use some of the recipes i have pinned on my food board at pinterest. specifically, i plan on cooking four soups off it. this is the first. it's called moqueca, or brazilian fish stew. g had bought a coconut when we went to the farmer's market, and found that he didn't like the coconut milk. i didn't want to waste it, so i put it in the freezer and thought about it. i remembered that the fish soup in honduras contained coconut milk, so i searched online and found this brazilian version. it turned out shockingly good. i felt almost gourmet bowling it up. i know it's not a recipe that will appeal to everyone, but i am a fisherman's daughter, so i am genetically predisposed to loving fish. it's more for an adult palette, i think, so i knew g wouldn't appreciate it too much. he was a trooper and ate a small serving, but i had bought him california rolls as his main dish. he was thankful. :)

here are the modifications that i made to the ingredients list:
1 pound of cod fillets
garlic salt (garlic is not my thing, so i never use the real thing)
the juice from 3 large-ish limes
black pepper
3 tablespoons olive oil
1 medium yellow onion, finely diced
1/4 cup green onion greens, chopped
1 green bell pepper, finely diced (i am generally too cheep to buy the colored ones)
2 cups grape tomatoes, quartered
crushed red pepper (the kind you put on pizza - hey, it's what i had)
1/4 cup chopped cilantro (no stems!)
1 cup fresh coconut milk
1 cup 2% milk
1 bag boil-in-a-bag minute rice (i am rice impaired and didn't want to go there)
this week's menu plan:
sunday - fish soup (california rolls)
monday - french toast, bacon, and eggs
tuesday - country ham, smashed potatoes, and green beans
wednesday - dinner at church
thursday - crock pot beef carnitas
friday - open
saturday - leftovers
now, which soup should i try next . . . ?
